Ingredients
- 2-¾ pounds Boneless, Skinless Chicken Breast, Cubed
- 4 cloves Garlic, Minced
- 2 Tablespoons Poultry Seasoning
- Pepper To Taste
- ¼ cups Chicken Broth, Low-Sodium
- 3 ounces, weight Sun Dried Tomatoes, Patted Dry And Sliced
- 1 cup Spinach, Roughly Chopped
- 5-½ Tablespoons Dried Basil
- 1 Tablespoon Butter
- 1 Tablespoon Garlic Salt
- 2 cups Brown Rice, Cooked
Preparation
In a large saute pan, add the cubed chicken and garlic. Coat with poultry seasoning and pepper, and start cooking over medium heat.
When chicken is about 3/4 done, add chicken broth, tomatoes, spinach and basil. Combine and lower the heat to medium low and cover. Cook for about 5–7 minutes and remove from heat.
Add butter and garlic salt and stir together once butter is melted. Serve over brown rice.
