Description
Look no further for a satisfying one-pot-meal. We like to add a little fresh basil and shredded cheddar cheese just before serving. Makes a great filling for stuffed peppers, too.
Ingredients
- 8 slices Thick Bacon, Chopped
- 1 Onion, Chopped
- 1 Red, Yellow, Or Orange Bell Pepper, Chopped
- 1 clove Garlic, Minced
- 1 pound Lean Ground Beef
- 1 cup White Rice
- 1-½ cup Chopped Fresh Tomatoes
- 1 Tablespoon Tomato Paste
- 1-¼ cup Beef Stock
- 1 teaspoon Dried Basil
- ¼ teaspoons Ground Black Pepper
- Fresh Basil And Shredded Cheddar Cheese, For Garnish (optional)
Preparation
Preheat oven to 355ºF.
Saute bacon in an oven-safe pan over medium high heat until brown. Add onions, peppers, and garlic; continue to saute until onions and peppers soften. Add rice the cook for about 1 minute, then add remaining ingredients.
Bring mixture to a boil, remove from heat and cover. Bake in preheated oven for 20–30 minutes. Serve with fresh basil and a sprinkling of shredded cheddar cheese if desired.
