Description
Beef Caldereta is a traditional Filipino stew made with tomato and soy sauces, red wine, tons of veggies, and the surprise ingredient: liver pâté!
Ingredients
- 2 pounds Beef Stew Meat, Cut Into Chunks
- Salt And Pepper, to taste
- 2 Tablespoons Vegetable Oil
- 1 Onion, Diced
- 1 Carrot, Diced
- 4 cloves Garlic, Minced
- ½ teaspoons Red Pepper Flakes
- 1 Tablespoon Tomato Paste
- 1 cup Red Wine
- ¼ cups Soy Sauce
- 1 can (4 1/4 Oz. Size) Prepared Liverwurst Spread , Or Any Pâté You Like
- 1 cup Tomato Sauce
- 2 Bay Leaves
- 1 Green Bell Pepper, Seeded And Diced
- 1 Red Bell Pepper, Seeded And Diced
- ½ cups Frozen Peas, Thawed
Preparation
Season beef with salt and pepper. Heat oil in a large pot and brown the meat on all sides, 5 minutes. Set aside.
Add onion, carrot, garlic, and red pepper flakes to the same pot. Cook for about 5 minutes, until onion is translucent. Add tomato paste and cook for 1 minute more. The paste should mix nicely with the veggies.
Add wine, soy sauce, and bring to a boil. Cook for about 3 minutes, until reduced by half. Add pâté, tomato sauce, and stir well. Add browned beef chunks and enough water to cover them. Add bay leaves. Bring to a boil and simmer covered over low heat for about 2 hours, until beef is fork-tender.
When there are about 10 minutes of cooking left, add red bell pepper, green bell pepper, and peas. Enjoy!
