Description
These cheesy, crispy, hearty beef quesadillas are my favorite way to use up leftover roast beef. We eat these as both appetizers and as a main dish.
Ingredients
- 8 Flour Tortillas
- 2 cups Shredded Cooked Roast Beef
- 2 cups Cheddar Or Mozzarella Cheese, Shredded
- ¼ cups Pepperoncinis (optional)
- 1 cup Salsa
- ½ cups Sour Cream
Preparation
Preheat oven to 350 F. Spray a large cookie sheet with non-stick spray and place four tortillas on it. Layer 1/4 cup of beef and 1/4 cup of cheese on each tortilla. Layer pepperoncini peppers on top (if using). Top with remaining tortillas.
Bake for 12-15 minutes, or until cheese has melted. Broil for 1-2 minutes at the end to add crispness.
Remove from oven. Cut into triangles with a pizza cutter. Serve with salsa and sour cream.
