Description

Belgian waffles with mascarpone cheese, pecans, and maple syrup are crisp on the outside and pillowy on the inside!

Ingredients

  • 2  Eggs
  • 1 stick Butter
  • 2 cups Buttermilk
  • 2 cups All-purpose Flour
  • 2 teaspoons Baking Powder
  • 1 teaspoon Baking Soda
  • 1 teaspoon Salt
  • Mascarpone Cheese, To Serve
  • ½ cups Toasted Pecans, For Topping
  • ½ cups Maple Syrup, To Serve

Preparation

Heat waffle iron. Separate egg whites from egg yolks.

Melt butter. Add egg yolks and buttermilk to a large bowl and beat together. Add flour, baking powder, baking soda, and salt and mix together. Stir in melted butter.

Beat egg whites into soft peaks and fold into batter.

Spray waffle iron with cooking spray. Add 1/4 cup batter to each quarter of the waffle iron, or 1 cup total. Bake until golden brown, about 3 minutes. Spread mascarpone cheese on each waffle, then top with toasted pecans, and drizzle with syrup.
