An easy weeknight dinner that comes together quickly and presents beautifully!
Ingredients
- ¾ cups Vegetable Broth
- 12 ounces, weight Asparagus Spears, Washed, Tough Ends Removed
- 12 ounces, weight Salmon Fillets
- ¼ cups Berry Jam Preserves
- 1 Tablespoon Olive Oil
- 1 Tablespoon Red Wine Vinegar
- 1 teaspoon Cumin
- 1 teaspoon Paprika
- Salt And Pepper, to taste
Preparation
Bring vegetable broth to a simmer in a large broiler-safe skillet. Add asparagus spears. Lay salmon fillets on top of spears and season with salt and pepper. Cover and simmer for 7-8 minutes.
While the asparagus and fish are simmering, combine the ingredients for the glaze (preserves through paprika) in a small bowl and add salt and pepper to taste.
Preheat the broiler in your oven.
Remove skillet from the heat and spoon the glaze onto the salmon. Place skillet under broiler for about 2-3 minutes, or until glaze is bubbling. Serve immediately.
