Description

With the addition of sun-dried cherry tomatoes and roasted red pepper this is a great bruschetta.

Ingredients

  • 1 whole Roasted Red Pepper, Jarred Or Freshly Roasted And Peeled And Seeded
  • ¼ cups Sundried Cherry Or Regular Tomatoes In Oil
  • ¼ cups Fresh Basil
  • 1 Tablespoon Fresh Oregano
  • 3 whole Tomatoes, Diced
  • 2 Tablespoons Sweet White Onion, Finely Diced
  • 2 cloves Garlic, Minced
  • ¼ cups Parmesan Cheese, Grated
  • 2 Tablespoons Extra Virgin Olive Oil
  • 1 teaspoon Balsamic Vinegar
  • Salt And Pepper, to taste
  • 1 whole Baguette, Sliced And Brushed With Olive Oil And Toasted
  • Olive Oil, For Brushing On The Baguette Slices Before Toasting

Preparation

Dice roasted peppper, sundried tomatoes, basil and oregano and put it into a large bowl. Fold in all the other ingredients (except the bread of course) and refrigerate to let the flavours meld. Bring back to room temperature before serving on the toasted baguette. So very good!!
