A better version of the boxed pancakes you’re used to. I promise.
The ingredients are all an estimate. Feel free to add subtract quantities based on the types of ingredients you use (i.e. whole milk vs. skim milk).
Ingredients
- 1-¼ cup Buttermilk Pancake Mix
- 1 teaspoon Hot Chocolate Mix (optional)
- 1 teaspoon Salt
- 1 Tablespoon Sugar
- 1 teaspoon Sugar
- 1 whole Egg
- 3 Tablespoons Melted Butter
Preparation
Whisk together all ingredients except hot chocolate mix until smooth.
This makes a better pancake mix. You’re ready to make a few regular pancakes now, for those not interested in chocolate.
To make chocolate pancakes, add the hot chocolate mix to the batter. Whisk until smooth and consistent in color.
Warm griddle or frying pan over medium heat, and coat with cooking spray. Pour batter onto griddle/frying pan, and flip when batter-side up starts to bubble like mad. Flip once—extra flipping might tear pancakes apart.
Top with whipped cream, powdered sugar, or strawberry jam. Enjoy!
