Biscuits and Homemade Gravy

    Description

    Mama don’t buy no store-bought biscuit packages! And canned or packaged gravy. Not in my house!

    Ingredients

    • FOR THE BISCUITS:
    • 2 cups Flour
    • 2 teaspoons Sugar
    • 1 teaspoon Baking Soda
    • 3 teaspoons Baking Powder
    • 1 teaspoon Salt
    • 1 stick Butter
    • 1 cup Buttermilk

    • FOR THE GRAVY:
    • 1 pound Ground Sausage
    • 3 Tablespoons Flour
    • 2 cups Heavy Cream Or Milk Or Combo Of Both
    • 1 teaspoon Black Pepper
    • ½ teaspoons Salt
    • ¼ teaspoons Freshly-ground Nutmeg

    Preparation

    For the biscuits:
    In a large bowl mix flour, sugar, soda, powder, and salt. Next using a pastry blender, incorporate butter into flour mixture until butter is the size of peas or smaller. Add buttermilk until all flour is moistened. Turn onto a floured surface and flour the top of the dough as well. Either roll out with a rolling pin or flatten with hands, until 3/4″ thick. Either cut into squares or cut with a round biscuit cutter. Makes 8–12 depending on size and thickness. Bake in a 450ºF oven for 12–16 minutes.

    For the gravy:
    Cook sausage until cooked through. Drain drippings, reserving 3 tablespoons only. Place drippings back in the pan with the sausage and add flour. Stir for approximately 2 minutes to cook out the flour taste. Add milk, pepper, salt and nutmeg. Bring to a boil and stir often until it is thickened. Pour over hot biscuits.
