Black Bean and Corn Salsa

Description

Salsas are among my favorite foods, this one being at the top of the list. I tried several recipes before coming up with this one that I find to be perfect.

Ingredients

  • 2 cups Black Beans
  • 1 cup Frozen Corn Kernels, Thawed
  • 1  Jalapeno, Seeded And Minced
  • ½ cups Diced Red Onion
  • 1 cup Diced Roma Tomato
  • 1 teaspoon Minced Garlic
  • 2-½ Tablespoons Chopped Fresh Cilantro
  • 1-½ Tablespoon Olive Oil
  • 3 Tablespoons Lime Juice
  • ½ teaspoons Cumin
  • ½ teaspoons Salt
  • ¼ teaspoons Black Pepper
  • 1 pinch Sugar

Preparation

In a large bowl, combine all ingredients. Let chill at least 1 hour before serving.
