Black Bean and Rice Casserole

Description

A dish perfect for vegetarians. I used a slew of ingredients I always find in my home. I think everyone has come to a situation when you don’t have anything in the fridge but still want to make a dish. This dish is not only healthy but also has a lot of protein and carbs.

Ingredients

  • 1 cup Cooked Brown Rice
  • 1 cup Boiled Black Beans
  • 1 cup Corn Kernels
  • 1 Tablespoon Milk
  • ½  Lime, Juiced
  • 1  Small Green Pepper, Chopped
  • ½  Red Onion, Chopped
  • 100 grams Cream Cheese
  • Chopped Coriander, As Desired
  • 1 Tablespoon Cumin
  • 1 Tablespoon Paprika Seasoning
  • 1 Tablespoon Chopped Garlic
  • ½ Tablespoons Cayenne Pepper
  • Salt And Pepper, to taste

Preparation

Heat oven to 220ºC (425ºF). Spray a 8×8 baking dish with olive oil.

Mix all ingredients and transfer to the baking dish. Cook for 30 minutes.

Let cool before serving. Garnish with fresh chopped green herbs if desired.

Note: We can call this a “lazy people” recipe—pour everything into a dish, leave it to cook and go watch a movie. Even though this dish doesn’t look very pretty, it is far better than it looks. If you don’t like spicy food, I recommend decreasing the amount of chili
