Black Bean Salsa

Description

So perfect for tailgating, afternoons on the couch, or a potluck. Make this as soon as possible!

Ingredients

  • 14 ounces, fluid Canned Black Beans, Drained And Rinsed
  • 14 ounces, fluid Diced Canned Tomatoes, Lightly Drained
  • 1 whole Jalapeno, Diced
  • ¼ cups Diced Onion
  • ½ cups Frozen Or Fresh Corn Kernels
  • ⅓ cups Italian Salad Dressing
  • 1 whole Lime, Juiced
  • 1 package (about 1 Oz. Packet) Taco Seasoning
  • 1 whole Avocado, Gently Diced
  • ¼ cups Cilantro Leaves (optional)

Preparation

Place the beans, tomatoes, jalapeno, onion, corn, dressing, lime juice, and taco seasoning in a large bowl. Stir, and taste for seasoning. (Add some cayenne pepper if you like things spicier!)

Before serving, gently stir in avocado and cilantro.

Serve with chips, or over lettuce and shredded cheese for a quick Mexican-style vegetarian salad.
