A fun appetizer for any get-together.
Ingredients
- 8 ounces, weight Cream Cheese, Softened
- 8 ounces, weight Crumbled Gorgonzola Or Blue Cheese
- ⅓ cups Dried Apricots, Finely Chopped
- ¼ teaspoons Black Pepper
- 1-½ cup Salted Pistachios, Finely Chopped
Preparation
Preparation time does not include 1 hour refrigeration time.
In a mixing bowl, add softened cream cheese, crumbled blue cheese, dried apricot pieces and black pepper. Stir well with a sturdy spoon or spatula until well combined.
On a separate plate, add salted pistachio pieces. With clean hands and a spoon, round out the mixture into bite-sized balls and roll in pistachios to evenly coat them. Transfer to a clean platter. Repeat until all ingredients have been used. Cover platter with plastic wrap and refrigerate 1 hour before serving.
Serve with a variety of crackers and enjoy!
