Blueberry Banana Oat Pancakes

Description

Comforting pancakes with a little fruit and oat twist.

Ingredients

  • 1 cup Quick Cooking Oats
  • 1-¼ cup All-purpose Flour (or Whole Wheat)
  • 2 Tablespoons Granulated Sugar
  • 2 teaspoons Baking Powder
  • 1 teaspoon Baking Soda
  • ½ teaspoons Salt
  • 1 teaspoon Vanilla Extract
  • 2 cups 2% Milk
  • 2 whole Eggs
  • 2 Tablespoons Canola Oil
  • 1 cup Blueberries, Washed And Dried
  • 2 whole Medium Ripe Bananas, Mashed

Preparation

Pulse the oats in a food processor until they resemble sand.

Combine flour, oats, sugar, baking powder, baking soda and salt, whisk and set aside.

In a separate bowl, whisk vanilla, milk, eggs and canola oil. Slowly add into the dry ingredients and mix well. .

Fold in blueberries and mashed banana.

Preheat an electric griddle or large skillet on the stove. Butter or spray with non-stick cooking spray. Spoon 1/3 cup of the batter onto the griddle or skillet. Flip when the edges begin to dry and bubbles form. Serve with syrup, peanut butter, more fruit, powdered sugar, etc.
