Description
Light and fluffy gluten-free and dairy-free blueberry cinnamon pancakes.
Ingredients
- 100 grams Gluten Free Self Raising Flour
- 1 Tablespoon Caster Sugar
- 1 Egg
- 100 milliliters Dairy Free Milk
- 1 teaspoon Ground Cinnamon
- 2 Tablespoons Blueberries
- Oil, As Needed
Preparation
In a large bowl, stir flour and caster sugar.
Beat egg and stir into flour mixture. Gradually whisk in milk until batter is smooth. Stir in cinnamon and blueberries.
Heat a drizzle of oil in a shallow pan over a medium heat. Add a quarter of the mix into the pan and cook for a couple of minutes on each side. Repeat with remaining batter.
