Hearty and healthy blueberry pancakes are perfect for cool winter mornings
Ingredients
- ¾ cups Whole Wheat Flour
- ¾ cups All-purpose Flour
- 1 teaspoon Baking Powder
- 1 teaspoon Baking Soda
- 1-½ Tablespoon Sugar
- 2 whole Egg Whites
- 1-½ cup Skim Milk
- ¼ cups Low Fat Cottage Cheese
- ½ teaspoons Vanilla
- ¼ cups Blueberries
Preparation
In a large bowl, combine flours, baking powder, baking soda and sugar. Set aside.
In a medium bowl, whisk together egg whites, milk, cottage cheese and vanilla. Add milk mixture to the dry ingredients and mix until just moist.
Spray a large, wide skillet or electric griddle with cooking spray. Heat over medium heat. For each pancake, spoon about ½ cup batter onto skillet and top with blueberries. Cook until lightly browned.
Serve hot and topped with maple syrup.
