Breakfast Bagels with Spicy Cream Cheese and Anahiem Chili Scrambled Eggs

Description

The best breakfast sandwich!
This is best served on whole wheat bagels, but any bread or bagel will do. Inspired by Noah’s Bagel creation.

Ingredients

  • 2  Eggs
  • 1 Tablespoon Greek Yogurt
  • ⅛ cups Diced Anahiem Chilis
  • 1 teaspoon Coconut Oil
  • ¼ cups Cream Cheese
  • 1 Tablespoon Chili Sauce (I Like Trader Joe’s)
  • 2  Whole Wheat Bagels (I Recommend Panera’s Bagels)
  • 4 slices Bacon, Cooked Until Crisp
  • ¼ cups Shredded Pepperjack Cheese (I Use The Pepadew Cheddar From Trader Joe’s)

Preparation

In a small bowl combine the eggs, Greek yogurt and chilies. Heat a skillet over medium heat with the coconut oil. When the oil is hot add the eggs and cook and stir until set to your liking. Remove pan from heat.

Combine the cream cheese and the hot chili sauce in a small bowl.

Split the bagels in half sandwich style. Toast the bagels using your preferred method.

Spread the cut side of each bagel with the chili sauce, then top the bottom half with eggs, bacon and cheese. Add the top of the bagel. Cut the breakfast sandwich in half and serve.
