Breakfast Bread Pudding

Description

Eggs, bread, fruit, nuts, milk, sugar . . . what part of that is not breakfast?

Ingredients

  • ¼ cups Butter
  • 5 slices Whole Grain Bread, Cubed
  • 1 whole Banana, Diced
  • 1 cup Fresh Blueberries
  • ½ cups Pecans, Chopped
  • 2 cups Milk
  • ½ cups Sugar
  • 2 whole Eggs, Slightly Beaten
  • 1 teaspoon Vanilla Extract
  • ½ teaspoons Cinnamon

Preparation

Heat oven to 350F. Place butter in 1 1/2 quart casserole dish; melt the butter in the preheating oven for about 5 minutes. Then remove the dish from the oven, add bread cubes, toss to coat. Add banana pieces, blueberries and pecans, and toss gently.

Combine milk, sugar, eggs, vanilla, and cinnamon in a medium-sized bowl; stir to blend. Pour this mixture over bread cubes.

Bake for 40 to 45 minutes until center is set. Serve warm, or reheat in microwave.
