Description

I love, love, love these and they are so simple to make — which is the most important thing, right? This isn’t even really a recipe and you can pretty much do whatever you want here. The amounts listed below are for about 6-8 burritos depending on how much you like them stuffed and what other ingredients you add.

Ingredients

  • 1 Tablespoon Vegetable Oil
  • 1 whole Green Pepper, Seeded And Diced (optional)
  • 1 whole Small Onion, Chopped (optional)
  • 8 whole Eggs, Beaten
  • 8 whole Soft Flour Tortillas
  • 2 cups Shredded Cheddar Cheese (or Any Cheese You Like)
  • 1 pound Cooked Sausage, Crumbled (optional)
  • 1 pound Cooked Bacon (optional)
  • Salsa, For Garnish (optional)

Preparation

If you are using the veggies such as green peppers and onions, start by sauteing them in a tablespoon of oil in a large skillet over medium heat. Once they are softened and onions are translucent, take your beaten eggs and pour them into the skillet. Just start scrambling the eggs together with your veggies. Once the eggs are scrambled you can start assembling the burritos.

Make sure you soften your tortillas prior to assembling them. I usually stick them in the microwave for about 30 seconds. If you don’t soften them, they will break while you are trying to roll them up.

Place a couple spoons full of egg mixture into the center of each tortilla and pile on whatever else you like. You can do sausage or bacon too, just be careful not to overstuff these babies. I usually do egg, then 2 tablespoons of salsa and a good sprinkling of shredded cheddar. Fold the sides of the burrito about an inch in on each side and then roll the long sides over and tuck under.

You can eat these immediately, or freeze for later. I tightly wrap them up in plastic wrap and freeze them. Then before heading off to work in the AM, I can just grab one. By the time I get to work it’s almost defrosted and I just pop in the toaster oven for about 10-15 minutes to get everything heated through and the top a little brown and crispy. You can also microwave these for about 30-45 seconds and it’s still just as good!

If you want to add more ingredients or want a bigger burrito, make sure you buy the larger 10″-12″ tortillas and then you can just make more eggs.

Very easy, just whatever you want and there you have it! A quick, healthy breakfast!
