Description

Fluffy scrambled eggs and savory ham inside an ultra crispy tortilla. Perfect for busy mornings and freezer-friendly!

Ingredients

  • 8 ounces, weight Cubed Ham
  • 4 Tablespoons Butter, Divided
  • 1 whole Onion, Diced
  • 1 whole Bell Pepper, Diced
  • 6 whole Eggs
  • Salt And Pepper
  • 8 whole 8-inch Tortillas
  • 1 cup Shredded Cheddar Cheese

Preparation

In a large skillet, melt 2 tablespoons of butter over medium heat. Cook onion, and bell pepper until tender. Add ham and cook until heated through. Pour into a bowl and set aside.

In the same skillet, heat 1 tablespoon butter over low heat. Crack eggs one at a time into a large bowl. Add salt and pepper. Whisk well. Scramble eggs until set. Pour into a bowl and set aside.

In the same skillet, heat remaining butter over medium high heat. Place tortilla in the skillet. Fill with veggie and ham mixture, eggs, and cheese. Top with another tortilla. Cook 2–3 minutes each side or until golden brown. Repeat with remaining ingredients.

Serve with salsa if desired.
