Salad for breakfast, yes really. Surprisingly good, and good for you as well.
Ingredients
- 1 slice Rye Bread Or Sourdough Bread
- 1 Tablespoon Butter
- 2 ounces, weight Mushrooms, Sliced Plus Butter To Fry Them In
- 1 whole Egg
- 2 cups Spring Mix Salad
- Vinaigrette Dressing, To Serve
Preparation
Spread bread with butter on both sides and grill or fry it in the pan with the sliced mushrooms, till brown. Cut bread into crouton size chunks.
Poach egg or prepare in a fry pan, till the white is cooked and yolk is still fluid.
Heap salad ingredients on a plate, top with bread and mushrooms, top with fried egg and drizzle vinaigrette dressing on top. Cut into the egg and let the yolk drip over the salad, then fork it up and enjoy.
