    Description

    Breakfast Salad with O J Vinaigrette and Toast Croutons is the perfect way to use up those leftover hard-boiled eggs!

    Ingredients

    • 4 cups Mixed Greens
    • 4 whole Radishes
    • 12 whole Cherry Tomatoes
    • 1 slice Whole-grain Toast
    • 4 whole Hard Boiled Eggs, Peeled
    • 2 Tablespoons Orange Juice Concentrate
    • 2 teaspoons Plain Yogurt
    • 1 Tablespoon Lemon Juice
    • 1 pinch Salt
    • 1 pinch Pepper
    • ΒΌ cups Extra Virgin Olive Oil

    Preparation

    Chop greens and divide and arrange on 4 salad plates. Thinly slice radishes and arrange on plates. Cut tomatoes in half and scatter on plates. Cut toast into cubes and scatter on plates. Quarter the hard-boiled eggs and place on plates.

    Whisk together the remaining ingredients and drizzle on salads as desired.
