OK, my fellow cheese lovers. This is it. The best grilled cheese ever! This is one thing that comes from walking down the cheese aisle at Costco without Jeremiah. I end up with things I don’t need, but REALLY want. Like an enormous wheel of soft, delicious brie.
Ingredients
- 8 slices Leftover Angel Food Cake (1 Inch Thick)
- 4 Tablespoons Soft Butter To Spread On The Cake
- 4 slices Brie
- 3 cups Sliced Strawberries
- ¼ cups Water
- ¼ cups Sugar
- Optional Topping: Powdered Sugar
Preparation
Heat a saute pan or griddle over medium heat. Spread a little soft butter on one side of each piece of cake.
Split your sliced strawberries into two – place half of them in a small saucepan and set aside. You’ll use the rest for layering on the cake.
Once the griddle is hot, place 4 pieces of the cake on it, butter side down. Layer half of the strawberries and all of the brie on the tops of the pieces of cake and then top each with another piece of cake, butter side up.
Meanwhile, combine the 1.5 cups sliced strawberries, water and sugar in a small saucepan over high heat. Cover and let simmer about 3-4 minutes or until strawberries are soft.
Flip the sandwiches over when the cake is nicely browned on one side.
Once the strawberries in the sauce are soft, pour the sauce into the blender (if you want it chunky and have a potato masher that would work too). Since it’s hot, I recommend that you take the center piece out of the lid to the blender and place the lid on the blender (without the center piece). You can cover the open hole with a tea towel and blend on low for a couple seconds, just until it’s all blended up.
Once the sandwiches are golden on the second side, remove from the pan and serve with the strawberry sauce or powdered sugar.
