Brown Butter and Brie Maltagliati

Description

Maltagliati essentially means “badly cut” & originally they were leftover tagliatelle scraps. Because food waste is frowned upon by a lot of nonnas, you would traditionally toss these pasta scraps into soup or turn it into a straightforward dish with a little bit of grated cheese & olive oil. This dish is an elegant update to that tradition especially if you have broken pasta sheets around the house!

Ingredients

  • 14 ounces, weight Broken Lasagna Sheets
  • 6 Tablespoons Unsalted Butter, Chopped
  • 1 cup Roasted Unslated Walnuts, Roughly Chopped
  • 10 ounces, weight Brie, Rind Removed And Roughly Chopped
  • Sea Salt, to taste
  • Freshly Ground Black Pepper, To Taste
  • 1-½ cup Pea Shoots, To Garnish

Preparation

Cook pasta according to package directions.

While the pasta is cooking, heat a large skillet pan over medium. Add butter, cook stirring frequently, about 5 minutes or until browned. Immediately, add walnuts, cheese, and pasta to skillet, and toss to combine. Season to taste with salt and pepper. Divide pasta between plates and top with pea shoots before serving.
