Description
Delicious as a dip, topper or spread. Butter bean dip also makes a fantastic alternative to butter or margarine and what a great way to jazz up a sandwich or wrap.
Ingredients
- ¼ cups Olive Oil, Divided
- ½ Medium Onion, Finely Chopped
- ½ teaspoons Crushed Garlic
- ½ teaspoons Ground Cumin
- 1 pinch Cayenne Pepper
- 1 can (410g Size, 250g Drained) Butter Beans, Drained And Rinsed
- ½ Tablespoons Lemon Juice
- Salt And Pepper
Preparation
Heat 1 tablespoon of the oil in a pan. Add onion, garlic, cumin and cayenne pepper. Cook, stirring, until the onion is soft. Add the beans and cook for 5 minutes.
Allow the mixture to cool slightly before blending with remaining olive oil, lemon juice, salt and pepper in a food processor or blender until well combined.
Store in an airtight container in the refrigerator for up to 1 week.
