Description

Simple recipe for some great homemade pancakes.

Ingredients

  • 1 cup All-purpose Flour
  • 1-¼ teaspoon Baking Powder
  • ½ teaspoons Baking Soda
  • ¼ teaspoons Salt
  • 1 Tablespoon Sugar
  • 1 whole Large Egg, Beaten
  • 1 cup Buttermilk
  • ⅛ cups Vegetable Oil
  • 1 teaspoon Vanilla Extract

Preparation

Sift flour, baking powder, baking soda, salt, and sugar into a bowl. Combine eggs, buttermilk, oil, and vanilla extract in a mixing bowl. Add sifted flour mixture and stir with a whisk until the dry ingredients are moistened. Do not overmix.

Using a 1/4-cup measuring cup, pour batter onto a hot nonstick pan sprayed lightly with cooking spray. Cook until the tops are covered with bubbles and the edges begin to brown. Turn and cook the other side. Remove from the pan and place on an oven proof plate and place in the oven at the lowest temperature to keep them warm so everyone can eat together.
