Cajun Salsa with Prawns and Avocado

Description

This salsa is more like a topping for crackers or tostadas than a dip. It is so simple to make but anyone who tries it will think you are a genius in the kitchen! Its that good! It’s also very nutritious and healthy. Clean eating at its very best!

Ingredients

  • 1 Tablespoon Olive Oil
  • 15 whole Prawns, Peeled And Deveined
  • 1 Tablespoon Cajun Seasoning (or More If You Like)
  • ¼ whole Onion
  • 1 whole Pepper (red, Yellow, Or Orange), Stem And Seeds Removed
  • 1 whole Tomato
  • ¼ cups Cilantro (or More To Taste)
  • 1 whole Lime
  • 1 whole Avocado
  • Salt To Taste

Preparation

1. Heat the olive oil in a pan on medium heat. Add the prawns when the oil is hot and sprinkle right away with the Cajun seasoning. Prawns cook quickly so make sure you don’t over cook them. Just about 3-5 minutes is all you need. Then set aside to cool.
2. In the meantime, dice your onion, pepper, tomato and cilantro. Add these into a bowl and juice your lime over the veggies.
3. Cut your avocado in half and take out the pit. My favorite way to dice an avocado is to take a sharp knife and with the skin on, carefully slice through the avocado flesh (not the peel) in strips and then cut across several times (you are basically cutting it into cubes, still in the peel). Then take a spoon and scoop the flesh out. It will be nicely diced for you. Add the avocado into the veggie mixture and stir to coat it with the lime juice.
4. Remove the tails from the prawns if you haven’t already and chop the prawns into small pieces that are a little bigger than the diced veggies. Add them into the mix.
5. Season with salt to taste and then spoon over crackers, tortilla chips, salad, or whatever. Sprinkle a little chopped cilantro over top if you want to be fancy. Or don’t. It tastes the same!
