Description
The flavor of Campari radiates in this Italian twist on the Caribbean classic. In fact, the combination of sour, bitter and sweet is so inspired that you might never want to switch back to rum!
Ingredients
- 1 whole Ripe Lime, Cut Into Wedges
- 4 teaspoons Cane Sugar
- 18 leaves Fresh Mint Plus Extra For Garnish
- 3 ounces, fluid Campari
- 1 bottle Chilled Sparkling Water, 12 Ounce Bottle
- Crushed Ice
Preparation
Evenly divide the lime and cane sugar between two highball or Collins glasses and crush them together with a muddler until pulpy (you can use the handle of a long wooden spoon if you don’t have a muddler). Split the mint between the two glasses and muddle everything a bit more gently, just to release the oils. Fill the glasses the rest of the way with crushed ice. Add the Campari then top it off with some sparkling water and give it a gentle stir. Garnish each glass with a sprig of mint and share with someone you really, really like.
