Caramelized Onion Dip

Description

Caramelized Onion Dip with a couple of pinches of cayenne.

Ingredients

  • 2 whole Large Yellow Onions
  • 4 Tablespoons Unsalted Butter
  • ¼ cups Vegetable Oil
  • ¼ teaspoons Ground Cayenne Pepper
  • 1 teaspoon Kosher Salt
  • ½ teaspoons Ground Black Pepper
  • 4 ounces, weight Lite Cream Cheese
  • ½ cups Sour Cream
  • ½ cups Mayonnaise

Preparation

Slice onions in half and then slice them so you get half-rounds. Meanwhile, warm the butter and oil in a saute pan over medium heat. When the oil is good and hot, add the onions, cayenne (I always add in more than the recipe), salt and pepper and saute for 10 minutes stirring pretty frequently. Reduce the heat to medium-low and cook, stirring occasionally, for 20-30 more minutes until the onions are browned and caramelized. I always find I have to cook my onions longer to get the caramelization I like. When done, remove from heat and allow the onions to cool.

Into the bowl of your electric mixer, add the cream cheese, sour cream and mayonnaise and mix on low speed fitted with the paddle attachment. Continue until all the ingredients are mixed. Add the onions and mix well continuing on low speed. Serve at room temperature.
