Description
I was trying to create something out of what I had and call it supper. Voila! This delightful dish resulted and most ingredients might be on hand!
Ingredients
- 12 ounces, weight Medium Raw Shrimp, Peeled, Deveined And Tails Removed
- 2 teaspoons Cajun Seasoning
- 1 whole Onion, Approximately Cut Into 1-inch Squares
- 2 Tablespoons Oil, Divided
- 1 whole Baked Sweet Potato, Cubed (with Or Without Skin)
- ½ cups Chopped Broccoli Florets
- 1 whole Red Pepper, Approximately Cut Into 1-inch Squares
- 2 ears Corn, Kernels Cut Off The Cob
- ½ teaspoons Dried Chili Flakes
- 2 dashes Hot Sauce
- 1 whole Lemon, Juiced (an Orange Is Equally Tasty)
- Salt And Pepper, to taste
Preparation
In a bowl, toss shrimp with Cajun seasoning and set aside.
Over medium to medium-low heat using a heavy skillet (I use cast iron), caramelize onions in all but 1 teaspoon of oil. Add sweet potatoes until beginning to brown. Add broccoli and cook only a few minutes. Add red pepper, cook only a few minutes. Add corn and cook until heated through.
Remove veggies from pan and set aside. Do not overcook and let broccoli or red pepper lose their vibrant, bright color.
Add remaining 1 teaspoon oil to skillet and cook shrimp. Do not overcook. When shrimp are cooked or opaque, add veggies back to the skillet along with chili flakes and hot sauce. Mix to combine.
Squeeze lemon juice over skillet. Stir and add salt and pepper to taste. Garnish and serve. Some garnish suggestions include coconut, nuts, pineapple, Mandarin oranges, and chopped green onions.
