You might think that carrots don’t belong in granola, but you’d be wrong! This carrot cake granola tastes just like the real thing. And the carrots totally work!
Ingredients
- 3 cups Rolled Oats
- 2 cups Pecans
- 2 cups Shredded Carrots
- ¾ cups Shredded Coconut
- ¾ cups Maple Syrup
- ½ cups Melted Coconut Oil
- 1 teaspoon Cinnamon
- 1 teaspoon Nutmeg
- 1 teaspoon Salt
Preparation
Preheat oven to 350ºF. Prepare a medium baking sheet and set aside.
Combine all ingredients in a large mixing bowl and stir to combine. Pour onto the baking sheet and smooth out into an even layer. Bake for 25 minutes, turning halfway through.
When granola has finished baking, remove from oven and allow to cool completely before serving.
