    Description

    These carrot cake oat squares are extremely soft, moist and filled with that deliciously sweet cinnamon spice you find in carrot cake.

    Ingredients

    • 1 cup Grated Carrots
    • 3 cups Oats
    • 2 teaspoons Ground Cinnamon
    • 1 teaspoon Baking Powder
    • ⅛ teaspoons Salt
    • 2  Medium Bananas, Mashed
    • ⅓ cups Maple Syrup
    • ⅓ cups Rapeseed Oil
    • 1 teaspoon Vanilla Extract

    Preparation

    Preheat oven to 180°C (355ºF) or 160°C (320ºF) fan. Grate carrots with a food processor or grater.

    In a large mixing bowl, combine oats, cinnamon, baking powder and salt.

    In a separate bowl, mash bananas. Add maple syrup, oil and vanilla extract, mix well. Mix dry ingredients with wet ingredients until well combined. Fold in grated carrot.

    Pour into 8 x 8 square baking tin lined with baking paper. Bake for 15–17 minutes.

    Leave to cool for another 20 minutes before slicing into squares.
