Cauliflower Crust Pizza

Description

I love pizza and let’s be honest: who doesn’t? So it would be good for me to find a way to eat more pizza! I tried a cauliflower crust instead of the original dough and I love it!

Ingredients

  • 1  Large Cauliflower Head, Broken In Small Florets
  • 3  Eggs, Whisked
  • 1 pinch Salt
  • 250 grams Grated Mozzarella, Divided
  • 200 grams Tomato Paste
  • Oregano
  • 6 slices Chorizo
  • 3 slices Prosciutto Crudo
  • 5  Small Mushrooms, Sliced
  • 2 Tablespoons Sweet Corn
  • 1  Green Onion, Chopped
  • 5  Cherry Tomatoes, Sliced

Preparation

Preheat oven to 150ºC (300ºF). Prepare a 28cm pizza tray and start to make the crust.

Place the cauliflower in a food processor and process the texture resembles rice. Bake it for about 15 minutes and then let it cool for a few minutes. Using a cheesecloth or a thin towel, squeeze out all the moisture. Squeeze really hard. Mix in the eggs, salt and 3 tablespoons grated mozzarella and mold your pizza cust. Place it on the pizza tray. Bake pizza crust for 12 minutes and then let cool for a few minutes.

On the crust, add tomato paste and sprinkle some oregano. Add the rest of the grated mozzarella, chorizo, prosciutto crudo, mushrooms, sweet corn, onion, and sliced cherry tomatoes.

Bake pizza for about 12–15 minutes.
