Cavatappi with Spinach, Garbanzo Beans, and Feta

    Description

    Love this any time of the year. Serve it up in a huge pasta bowl with crusty bread.

    Ingredients

    • 8 cups Coarsely Chopped Spinach
    • 8 cups Hot Cooked Cavatappi (about 6 Ounces Uncooked)
    • 1 cup Crumpled Feta Cheese
    • ¼ cups Olive Oil
    • 2 Tablespoons Fresh Lemon Juice
    • ½ teaspoons Salt
    • ½ teaspoons Black Pepper
    • 2 cans (19 Oz. Size) Chickpeas (Garbanzo Beans), Or Other White Beans, Drained
    • 4 cloves Garlic, Minced
    • Lemon Wedges, For Garnish (optional)

    Preparation

    Combine ingredients in a large bowl and toss well. Garnish with lemon wedges, if desired.

    Note: Optional add-ins include sautéed scallops or shrimp.
