Ingredients
- 4 slices Bacon, Cut In Half To Make 2 Shorter Pieces Per Strip
- 2 Tablespoons Butter
- 8 whole Large Shrimp, Peeled And Deveined
- ½ teaspoons Cayenne Pepper
- ½ teaspoons Old Bay Or Other Seafood Seasoning
- 1 clove Minced Garlic
- 1 Tablespoon Minced Fresh Parsley
- 2 Large Buttermilk Biscuits, Homemade Or Store Bought, Cut In Half And Lightly Toasted
- 2 ounces, weight Sliced Sharp Cheddar Cheese
- 2 whole Eggs, Cooked Sunny Side Up Or Any Way You Like
- Fresh Fruit (optional For Serving)
Preparation
Cook the bacon in a skillet over medium-high, turning as needed, until crispy. Drain on paper towels and pour off most of the bacon grease.
In the same skillet, add the butter. When the butter foams, add the shrimp, cayenne pepper, and Old Bay. Cook for 2 minutes, then flip the shrimp. Add the garlic and parsley and stir for 1 minute, then turn the heat off.
Preheat the broiler to high and arrange the biscuit halves cut side up in a pan. Spread the bottom halves with sliced cheese and broil or toast until the cheese is melted.
To build the sandwiches, arrange some bacon on the bottom of the sandwich over the melted cheese. Top with the fried egg and then the shrimp. Close the sandwich with the top half of the biscuit. Serve with fruit and eat while hot. Enjoy!
