What else could you ask for than the aroma of melting cheese inside a steaming pastry filling the kitchen?

Ingredients

  • FOR THE DOUGH:
  • ½ ounces, weight Fresh Yeast
  • ½ cups Lukewarm Milk Or Water
  • 5 cups Flour
  • 10 Tablespoons Butter
  • 4 ounces, weight Plain Yogurt
  • 2  Eggs
  • FOR THE FILLING:
  • 2 ounces, weight Grated Cheese, Such As Gouda Or Edam
  • FOR THE EGG WASH:
  • 1  Egg Yolk
  • ½ teaspoons Salt

Preparation

In a cup, stir yeast into lukewarm milk or water. Set aside and let rest until it is foamy.

Whilst waiting, mix flour, butter, yogurt and eggs in a large bowl. When yeast mixture has activated, pour into the bowl. Mix and knead until dough comes together.

Divide dough into 4 balls and set somewhere warm as you work on each dough ball, keeping remaining dough balls covered as you work.

Take a dough ball and roll flat into a disc. Cut into 8 triangular slices, like you would slice pizza. Divide cheese on top of each piece, then roll and bend into a crescent shape. Place on a tray and repeat with remaining dough and cheese.

Whisk egg yolk and brush on top of rolls. Sprinkle salt on top. Bake at 350°F (180°C) oven for 30 minutes.
