Description

Cheese, bacon and apple are a favorite combo over here. Sweet and savory are a classic combo, made even better with farm fresh eggs! Frittatas are simple to prepare and are great for meals on the fly. Although this recipe sounds heavy, I have made it light. Great high energy, protein packed meal!

Ingredients

  • 3 slices Nitrate-Free Turkey Bacon (Pork Bacon Is Great, Too)
  • 1 Tablespoon Butter
  • 1 whole Medium Sized Apple, Diced Into Small Pieces (I Like Honey Crisp, Pink Lady Or Gala Apples)
  • 1 pinch Fine Sea Salt
  • 1 pinch Ground Cinnamon
  • 4 whole Large Organic Eggs, Whisked
  • ½ cups Egg Whites
  • ½ cups Fat-free Ricotta Cheese
  • 2 ounces, weight Your Favorite Grated Cheese (I Like Sharp Cheddar)

Preparation

NOTES:
– If you want to lighten this up a bit more you can use all egg whites. Remember that organic egg yolks are nutrition powerhouses though.
– You can make this vegetarian with meatless bacon.

METHOD:
Cook bacon over medium heat in an oven safe skillet until crisp. I use my 10 inch cast iron pan. Remove bacon from pan and keep residual grease in the pan. Let bacon cool a bit and then dice it into small pieces.

Heat pan over medium high heat, add the butter, apple, salt and cinnamon. Sauté apples for about 6-8 minutes until softened and fragrant, stir occasionally and reduce heat if needed. Add diced bacon back into pan. Stir to combine. Reduce heat to medium and stir to make sure the mixture is evenly distributed in the pan.

Pre-heat broiler with the rack in the middle.

In a bowl whisk eggs and egg whites, then stir in ricotta and 1 ounce of the grated cheese. Pour the egg mixture into the pan over the apples and bacon. Cook over medium heat for about 5 minutes until the eggs are mostly set and the edges begin to pull away from the sides of the pan. Top with remainder of the grated cheese. With an oven mitt, carefully bring your skillet to the oven and broil for about 2-3 minutes until the cheese is slightly browned and melted.
