Description

Eggs are excellent! They offer great flavor, good nutrition and are easy to prepare. Eggs have a lot going for them. My go-to recipe for preparing eggs is Cheesy Crustless Quiche with Roasted Peppers. I make it for a special Easter breakfast. I make it for Christmas Brunch. I make it for an easy supper. I make it when we have our monthly card group and we all bring snacks. It is always quick, easy and good.

Ingredients

  • 6 whole Eggs
  • ¼ cups Flour
  • ½ teaspoons Salt
  • ¼ cups Butter, Melted
  • 1 cup Cottage Cheese
  • 1-½ cup Colby Jack Cheese
  • ¼ cups Diced Roasted Peppers

Preparation

Preheat oven to 350ºF.

In a bowl, beat eggs until light. Add flour and salt and mix well. Add melted butter. Stir in cheeses and peppers. Mixture will be somewhat lumpy.

Pour into a nonstick spray-coated 8×8 baking dish. Bake for 20-25 minutes.

Note: If you don’t have roasted peppers, you may substitute canned chili peppers.
