Pie for breakfast? What more could you want? Cheesy veggies and ham all in a pie crust. Yum!
Ingredients
- 1 whole 9-inch Pie Crust (homemade Or Store Bought)
- 1 cup Ham, Diced (I Used Leftovers From A Ham Dinner)
- ½ cups Red Bell Pepper, Finely Diced
- 2 Green Onions, Sliced
- 1 cup Cheddar Cheese, Shredded
- 5 Eggs, At Room Temperature, Large
- ¾ cups Half-and-half
- 1 teaspoon Salt
- ½ teaspoons Pepper
Preparation
Preheat oven to 375ºF.
If making a homemade pie shell, make pie crust and place into a 9″ pie dish and set aside. If using a store-bought crust, place into a 9″ pie dish and set aside.
Wash and chop ham, bell pepper, and green onions. Grate cheese. In a large bowl beat eggs until they are well scrambled.
Mix in the rest of the ingredients and pour into prepared pie shell.
Bake for 50-60 minutes or until completely set. A knife inserted into the center should come out clean and the very middle shouldn’t be jiggly.
