In this recipe, we added as many kinds of cheese as we could – you can always add your favorites and make the sandwiches your way.
Ingredients
- 1 Medium Size Buckwheat Roll
- 4 Tablespoons Ricotta Cheese
- 3 Medium-size White Mushrooms, Sliced
- 4 slices Provolone Cheese
- 3 Tablespoons Homemade Roasted Eggplant Pepper Spread
- 2 teaspoons Grated Pecorino Cheese
- 4 Olives, Sliced
Preparation
Preheat oven to 480ºF (250ºC). Line with parchment paper a small pan. Set aside.
Cut buckwheat roll into equal halves. Feel free to use any type of bread you like. Spread ricotta cheese on both halves. Add mushrooms on top and then add Provolone cheese slices. Transfer sandwiches to prepared pan and bake for 3–5 minutes.
When done, spread roasted eggplant pepper spread. Add grated Pecorino cheese and sliced olives.
