Cherry Cheesecake Bites

Description

Cheesecake is my favorite dessert. But preparing a full cheesecake takes a while to bake. So instead, I made smaller versions of cheesecake in half the time. Each cheesecake bite is topped off with some cherry pie filling, ensuring every piece gets a bite of cherry.

Ingredients

  • 12  Vanilla Wafers
  • 16 ounces, fluid Cream Cheese, Softened
  • 1 cup Granulated Sugar
  • 2  Eggs
  • 1 teaspoon Vanilla Extract
  • 1 can (21 Oz.) Cherry Pie Filling

Preparation

Preheat oven to 350ºF. Line a muffin pan with 12 cupcake liners. Place 1 vanilla wafer into each cup.

In a large bowl, use a hand mixer to beat softened cream cheese with granulated sugar, eggs and vanilla extract until creamy.

Evenly pour cheesecake batter over each vanilla wafer. Bake for 25–30 minutes. Let cool. Top each cheesecake bite with cherry pie filling.
