Description
A sweet, healthy, vegan. gluten-free baked oatmeal that’s chock full of cherries and chocolate chips.
Ingredients
- 2 cups Rolled Oats (I Used Gluten Free)
- ½ teaspoons Baking Soda
- ¼ teaspoons Salt
- 1 cup Pitted Cherries, Frozen Or Fresh, Cut In Half
- 1-½ cup Unsweetened Vanilla Almond Milk
- 2 teaspoons Vanilla Extract
- ¼ cups Maple Syrup
- 2 Tablespoons Coconut Oil, Melted
- 2 Tablespoons Mini Chocolate Chips
Preparation
Preheat oven to 350 F. Spray an 8 x 8 baking dish with cooking spray; set aside.
In a bowl add oats, baking soda and salt. Mix together. Pour into prepared baking dish. Top with cherries.
In a separate bowl, add almond milk, vanilla extract, maple syrup and coconut oil; whisk together until combined. Slowly pour over the oat and cherry mixture. Sprinkle with chocolate chips.
Bake for 30-35 minutes or until lightly brown on top and oatmeal is set.
