Description

Dark sweet cherries are in season and that means it’s time to make Cherry Clafoutis, a classic French dessert of custard studded with ripe fruit. Happy summer!

Ingredients

  • 2 cups Dark Sweet Cherries, Washed, Pitted, And Stems Removed
  • 2  Large Eggs
  • 1 cup Whole Milk Or Half-and-Half
  • ½ cups Granulated Sugar
  • ½ cups All-purpose Flour
  • ¼ teaspoons Pure Almond Extract
  • 1 teaspoon Pure Vanilla Extract
  • 1 pinch Fine Salt
  • Whipped Cream Or Creme Fraiche, For Garnish
  • Confectioners Sugar, For Dusting (optional)

Preparation

Preheat oven to 350ºF. Butter six 4 1/2-inch round creme brulee dishes; place on a rimmed sheet pan.
Divide cherries evenly among dishes.

Combine remaining ingredients in a blender or food processor until completely combined. Pour batter evenly over the cherries.

Bake in preheated oven for 30–40 minutes, or until custard begins to turn golden brown around the edges. Remove from oven and cool to room temperature or chill before serving. Garnish with whipped cream, creme fraiche, and/or a dusting of confectioner’s sugar.
