Description

A refreshing sweet and sour drink with a slight fizz and a lovely mint flavor! Great for children and grownups with a gorgeous deep red color and packed with freshly squeezed lemon juice, ripe cherries and garden grown mint.

Ingredients

  • 2 cups Cherries
  • 6 whole Large Lemons Juiced
  • ½ cups Mint Simple Syrup
  • Fresh Mint For Garnish
  • Ice, To Serve
  • 4 cups, 3 tablespoons, 1-⅞ teaspoons, ¼ pinches Club Soda, Chilled

Preparation

Pit the cherries and set aside. Place the cherries into a blender and puree until you have a pretty smooth cherry puree.

Juice the lemons into a pitcher or bowl, straining for seeds. Add the cherry puree to the lemon juice. Add the mint simple syrup.

In a large serving pitcher, add two stalks of fresh mint and lots of ice. Pour the combination of lemon juice, cherry puree and mint simple syrup over the ice. Fill the rest of the pitcher with the club soda and stir to combine before serving.

Garnish each glass with a sprig of fresh mint.
