Description

Chewy, naturally-sweetened granola bars for busy days.

Ingredients

  • 1-½ cup Rolled Oats
  • 1 cup Puffed Brown Rice Cereal
  • 1 cup Dry-roasted, Unsalted Peanuts
  • ½ cups Raisins
  • ½ teaspoons Kosher Salt
  • 1 teaspoon Cinnamon
  • 2  Overripe Or Roasted Bananas, Peeled
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Olive Oil
  • 2  Egg Whites

Preparation

Preheat oven to 350 F.

Combine all dry ingredients in a large bowl.

Mash or blend bananas into a paste and mix with vanilla, oil, and egg whites.

Add wet ingredients into the dry ingredients and mix rather well to coat.

Spread the mixture into a parchment or Silpat-lined sheet tray or 9″ by 9″ casserole dish, to about a height of 1/2″. Pack it down well so as not to leave gaps. It will be sticky.

Bake for 15-20 minutes or until solid and slightly browned, rotating tray after first 10.

Then remove it from the oven and let it cool in pan for 1/2 hour, then turn it out onto a cutting board and cut into desired sizes/shapes. Put the cut bars onto another baking tray and let them cool completely.

Once bars are cooled, set oven to 325 F and place cut bars immediately back into the oven. When oven is preheated, turn it off and allow bars to reheat and crisp. Leave them in the oven with door closed for an hour or longer, depending on desired texture.
