Description
These bars are unreal! So good! The perfect sweet to salty mix and they’re easily homemade! A perfect snack for packed lunches or that “I just need a snack” feeling.
Ingredients
- ⅓ cups Light Corn Syrup (If You Don’t Have Corn Syrup Or Are Against It You Can Use A Sugar Simple Syrup
- ¼ cups Peanut Butter
- 1 Tablespoon Honey
- 1 teaspoon Vanilla Extract
- 1 cup Almonds
- 1 cup Cashews
- 1 cup Salted Peanuts
- ½ cups Dried Cranberries
- ½ cups Chocolate Chips
- 1 cup Oats/Quick Oats
- Coarse Sea Salt To Taste
Preparation
Preheat oven to 350°F.
Microwave corn syrup in a medium microwave safe bowl for about 30 seconds. Then add peanut butter, honey and vanilla and stir until completely combined and creamy.
In a separate bowl combine all of the nuts, cranberries and chocolate chips. Add a dash of salt and mix to combine everything.
Pour corn syrup mixture over the mixed nut mixture and mix well.
Stir in oats and combine well.
Line a 9×9 glass square baking dish with parchment paper (Hint: I use chip clips to hold the parchment paper in place.)
Dump all of the ooey gooey nutty mix into the lined baking dish. Spread evenly with a rubber spatula.
Bake for 15 minutes. Remove from oven and allow to cool on a wire rack for about 10 minutes and transfer to a plate and refrigerate until completely firm.
Cut into bars. I made 12 bars by making 4 long strips and cutting them into 3rds.
