Ingredients

  • 4 pieces (5 To 6 Oz. Size) Boneless, Skinless Chicken Breast, Cubed
  • 2 Tablespoons Poultry Seasoning
  • ½ cups Sweet Yellow Onion, Diced
  • 3 cloves Garlic, Minced
  • 2-½ cups Mushrooms, Sliced
  • ¼ cups Low Sodium Chicken Broth
  • 1 cup Spinach
  • 1 Tablespoon Butter
  • Salt And Pepper, to taste

Preparation

In a large saute pan, add chicken cubes and season with poultry seasoning. Add onion and garlic and stir everything together.

Add mushrooms on top of the chicken. Add broth and cook covered over medium heat for 10 minutes, then stir. Cook another 5 minutes, then uncover. Once chicken pieces are almost cooked through (another 4–7 minutes), add spinach.

Cook for 5 more minutes, stirring after 2 minutes. Add butter and season to taste with salt and pepper. Serve over rice and enjoy!
