Description
Chicken Bog is a traditional Southern dish featuring rice, chicken and sausage. It’s hearty, filling and very tasty!
Ingredients
- 1 whole (3 Lb. Size) Chicken, Quartered
- 1 pound Smoked Link Sausage, Sliced
- 1 cup Chopped Yellow Onion
- 1 stick Butter
- 2 teaspoons Salt
- 1 teaspoon Cayenne Pepper
- 1 teaspoon Black Pepper
- 3 Bay Leaves
- 8 cups Water
- 3 cups Long Grain White Rice
Preparation
Add chicken, smoked sausage, onion, butter, salt, peppers, and bay leaves to a big pot together with water. Bring to a boil, lower the heat, and simmer, covered, for 40 minutes. Transfer chicken to a plate and pick the meat off the bones, discarding the bones and the skin.
In the same pot, add the rice, bring to a boil, and cook for 10 minutes. Then reduce the heat, and cook, covered, for 10 minutes more, or until done.
Discard the bay leaves, add the chicken back to the pot, stir well, and serve.
