Terrific for a weeknight supper. Cheese, please!
Ingredients
- 10 ounces, fluid Cream Of Chicken Soup
- ¼ cups Milk
- 2 cups Shredded Chicken
- 1 teaspoon Pepper
- 15 ounces, weight Cool Ranch Doritos Chips
- 1 whole Tomato, Diced
- 2 stalks Scallions, Sliced
- 15 ounces, weight Black Beans, Rinsed And Drained
- 2 cups Mexican Blend Cheese, Shredded
- ½ cups Sour Cream, To Serve
Preparation
Preheat oven to 375ºF.
In a 9x12x3 baking dish, combine soup and milk. Add shredded chicken and black pepper on top in an even layer (yes, it’ll fall into soup mixture, and that is fine). Add Doritos evenly across the top, followed by diced tomatoes, sliced green onions, and black beans. Sprinkle cheese blend over the entire dish. Cover with aluminum foil and bake 20 minutes.
Remove foil and allow casserole to sit in the oven a few minutes in residual heat to brown cheese. Cut and serve with a dollop or two of sour cream!
