Description

A quick and flavorful fajita flavored rice bowl, topped with chicken and vegetables. The perfect weeknight meal.

Ingredients

  • 1 pound Chicken Breasts, Skinless & Boneless
  • 1 whole Large Bell Pepper, Stem And Seeds Removed, Cut Into Thin Strips
  • 1 whole Medium Onion, Cut Into Thin Strips
  • 1 package (6 Oz. Size) McCormick Fajita Skillet Sauce
  • 4 cups Cooked Brown Rice
  • 1 whole Tomato, Seeded, Diced (optional)
  • Sour Cream, Optional, For Serving

Preparation

Cut chicken into bite size pieces and add them into a large skillet. Over medium heat, cook the chicken until no longer pink, about 6 minutes. Add peppers and onions and cook for 3 minutes more.

Stir in the McCormick Fajita Skillet Sauce and cook for 3 minutes; just until the vegetables are tender and sauce is warmed.

Evenly divide the rice between 4 bowls and evenly divide the chicken mixture. Top with tomatoes and sour cream if desired.
